Toast with goat's cheese-avocado spread and grapefruit
Breakfast or lunch with toasted wholemeal bread, a spread of avocado and fresh goat cheese and wedges of grapefruit with pumpkin seeds.

Roast the slices of bread. Heat a frying pan without oil or butter and toast the pumpkin seeds for 3 minutes. Scoop on a plate and let cool.

Use a sharp knife to cut the skin and the white skin of the grapefruit.

Cut the segments of flesh from the membranes, so that you can easily pop out the flesh with your knife.

Cut the avocado half in half and remove the kernel. Scoop the flesh from the skin with a spoon.

Put in a high cup together with the goat's cheese. Purée with the hand blender to a spread and season with salt and pepper.

Brush the toasted bread slices with the avocado goat cheese spread, top with the grapefruit wedges and sprinkle with the pumpkin seeds.
