Toasted salsify
Vegetarian Dutch dish with salsify, carrot, red onion and thyme.

Preheat the oven to 200 ºC.

Line a baking sheet with baking paper.

Peel the salsify and the carrot with a peeler. Halve thick specimens in length so that all salsify and root have the same thickness.

Immediately after peeling, stalk the stalks in a bowl of water with the vinegar until use.

Boil the salsify and roots in water with salt for 5 minutes. Drain and let drain well.

Cut the onion into wedges. Ris the leaves of the sprigs of thyme.

Mix the salsify and carrot with the onion, oil and thyme on the baking tray. Season with pepper and coarse sea salt.

Roast the salsify, carrot and onion in the oven for about 25 minutes until done.
