Soak the cashew nuts in water for 15 minutes. In the meantime, preheat the oven to 180ºC. Dab the tofu dry and mix with the garam masala, 1 tablespoon ginger and 1 tablespoon of the garlic.

Roast the tofu on the baking tray in the oven. Meanwhile, let the butter melt for the sauce and add the rest of the garlic and ginger.

Fry the garlic and ginger fragrant, but do not let discolour. Add the tomatoes and cook until the tomatoes are very soft.

Add the red pepper, cashew nuts with some of the soaking water and honey to the sauce and cook for about 10 minutes at a low setting. Puree the sauce with a hand blender and add the lime juice. Season with salt and pepper.

Add the tofu to the sauce and warm for about 2 minutes. Sprinkle with the coriander.
