Fish platter with mint couscous

A nice Mediterranean recipe. The main course contains the following ingredients: fish, green beans (500 g), olive oil, onion (chopped), ground cumin (djinten), tomato cubes (400 g), coalfish fillet ((bag 750 g, frozen), thawed), dried mint and couscous.

Directions

  1. Preheat the oven to 180 ° C. Remove the stalk and the tip of the green beans, halve the green beans and cook in 6 min. Until al dente. Drain.
  2. Heat the oil in a frying pan and fry the onion for 2 minutes. Stir in the cumin and the tomato cubes and bring to the boil. Remove the pan from the heat and add the green beans and pepper and salt to taste. Put in the baking dish. Cut the fish into pieces, lay on the vegetables and cover with aluminum foil. Place the dish in the middle of the hot oven for 20 minutes until the fish is done.
  3. In the meantime, prepare the couscous according to the instructions on the packaging. Season with the fresh mint and pepper and salt. Serve the fish dish with the mint couscous.
