Tomato broth with sauerkraut and ham


A tasty recipe. The starter contains the following ingredients: meat, fresh thyme (15 g), shallots, olive oil, wine sauerkraut (uncooked), sugar, tomatoes, garlic, medium dry sherry, beef stock (380 ml), Coburger raw ham and salt and pepper.

Directions

  1. Sprinkle from 3 sprigs of thyme leaves.
  2. Chop and shred scallops.
  3. Heat half of oil in pan and gently fry half of shallots for about 2 minutes.
  4. Stir in the sauerkraut, sugar and half of the leaves of thyme leaves and simmer for approx.
  5. 15 minutes.
  6. Dip tomatoes, dice and dice in boiling water.
  7. Cut tomatoes into pieces, remove seeds and cut flesh into cubes.
  8. Heat residual oil in soup pot.
  9. Rest of shallot gently for about 2 minutes.
  10. Peel the garlic and press it over it.
  11. Tomato cubes and the rest of the ripened thyme leaves gently roast for approx.
  12. 3 minutes.
  13. Add sherry, fond and 2 dl of water, bring to the boil and simmer for about 10 minutes.
  14. Cut the ham into strips.
  15. Broth to taste with salt, pepper and possibly a little sugar.
  16. Broth in four preheated bowls.
  17. Put sauerkraut in the middle of the pluck and put strips of ham on it.
  18. Garnish with sprig of thyme..
