Tomato chutney
Make your own tomato chutney with red onion, ginger, white wine vinegar, agua sugar and sambal.

Cut the tomatoes into wedges. Chop the onion. Peel and grate the ginger.

Bring the tomatoes, onion and ginger with the remaining ingredients to the boil in a pan with a thick bottom.

Allow to cook for 20 minutes on medium heat. Stir frequently. Turn down the heat and let it simmer for another 10 minutes. Season with salt and pepper.

Fill the preserving jar to the brim with the tomato chutney. Immediately close and allow to cool down in reverse.
