Tomato soup with meatballs
Classic tomato soup on Dutch recipe. Filled with beef balls.

Peel and chop the onion. Clean the carrot, wash and cut into cubes. Finely chop half of the parsley.

Heat the oil in a frying pan. Fry the onion and carrot gently for about 2 minutes. Sprinkle the sugar over it and let it melt with stirring until it turns color.

Stir in the tomato cubes with moisture and heat for approx. 1 min. Pour the stock through a sieve over a pan (keep the meat).

Add the other half of the parsley, the herb bag and water. Bring this to the boil and let it boil gently for about 15 minutes.

Mix the minced meat with pepper and some salt and turn them into small balls. Sift the tomato soup over another pan.

Add the meatballs and sifted beef to the soup, bring to the boil and simmer for about 10 minutes.

Put the soup in the plates or soup bowls and sprinkle the chopped parsley over it.
