Directions

  1. Heat 2 tablespoons of oil and fry the onion at medium height in about 5 minutes.
  2. Add the garlic and sausage and fruit for another 2 minutes. Add the rice and stir everything.
  3. Pour in the chicken stock and cook the rice in about 15 minutes until al dente.
  4. Transfer everything to a bowl and stir in the peas and eggs.
  5. Heat some oil in a clean pan with non-stick coating and pour in the rice. Leave on low heat with the lid on the pan in about 5 minutes.
  6. Shake the pan, turn the tortilla with the lid or a flat plate and let the tortilla slide back in the pan.
  7. Fry this side on low setting for another 5 minutes and let the tortilla rest for about 10 minutes before cutting it.
  8. The tortilla may still be slightly moist inside.
