Trio of jasmine sorbet, peach and almond biscuits
A tasty Italian recipe. The vegetarian dessert contains the following ingredients: herbal tea (jasmine), sugar, orange, almond shavings (a 55 g), honey (orange blossom), cinnamon, egg white (whisked), powdered sugar, peaches and orange liqueur (Italian liquor).

Bring 400 ml of water to the boil.

Turn off and let the bag of jasmine tea pull for 10 minutes.

Remove the tea bag and add 150 g of sugar.

Dissolve the sugar with stirring.

Pour this mixture into the freezer and allow to cool.

Then let it freeze in the freezer in 3-4 hours.

Puree the ice cream mix after 2 hours with the hand blender to create a fine texture.

In the meantime, preheat the oven to 150 ° C.

Clean the orange, grate the peel off and squeeze half of the orange.

Grind the almonds in the food processor and mix with the honey, 1 tablespoon orange zest, the cinnamon and the rest of the sugar.

Add 1-2 tablespoons of protein until the dough is soft, but firm.

Divide the dough into 8 rolls of bread and place them on a griddle covered with parchment paper and press them down slightly.

Bake the cookies in the oven in 20 minutes until golden brown.

Let the cookies cool on a rack and dust them with icing sugar.

Peel the peaches and cut them into cubes of 1 cm.

Mix with half a tablespoon orange zest, 1 tablespoon orange juice and the liqueur.

Leave at least 30 minutes.
