Trout with garlic, coriander and lime juice.

Rinse the trout under cold water and pat dry with kitchen paper. Use 2 sharp slits in each fish with a sharp knife on both sides.

Squeeze out the lime. Sprinkle on both sides and in the abdominal cavity with half the lime juice and sprinkle with chilli and salt.

Place the trout on a plate and marinate for 1 hour. Dab the trout dry with kitchen paper. Cut the garlic into slices.

Heat the oil in a pan, fry the garlic lightly brown on medium heat and scoop out of the pan onto kitchen paper.

Slice the coriander. Stir through the remaining shortening the rest of the lime juice, coriander and garlic. Scoop the mixture over the trout.
