Mix the tuna with the egg, breadcrumbs, the spring onion, coriander and lime zest. Season with salt and pepper and make 4 burgers with moist hands.

Heat the oil and fry the burgers in 56 minutes around golden brown. Mix the mayonnaise with the wasabi.

Grill the rolls on the cutting edge. Serve the burgers on the buns and garnish the tuna burgers with pickled cucumber and wasabi mayonnaise.
