Cook the macaroni according to the instructions on the package. In the meantime, heat the oil in a frying pan and fry the onion and garlic for 3 minutes.

Add the mushrooms, thyme and rosemary and fry for 10 minutes. Grind almond milk, soaked cashew nuts, lemon zest, juice and half of the mushrooms in a food processor to make a smooth, creamy sauce.

Stir the sauce through the macaroni and serve with the rest of the fried mushrooms and a handful of rocket.
