Vegan pokébowl with watermelon and black rice


Pokebowl without meat with black rice, watermelon, lime, ginger, spring onion, cucumber, wasabi, avocado and soya beans.

Directions

  1. Prepare the rice according to the instructions on the package.
  2. Cut the flesh of the watermelon into cubes of 1½ cm. Squeeze out the fruit of the lime. Cut the spring onion into wafer-thin slants.
  3. Drain the ginger and collect 2 tbsp of the liquid (per 4 persons).
  4. Spoon the watermelon into a bowl and add 2 tsp lime juice (per 4 people), the spring onion, the ginger juice, the soy sauce and sesame oil.
  5. Let alone use and scoop occasionally.
  6. Halve the cucumber in the length and remove the seed lists with a teaspoon. Cut into bows. Finely chop the wasabi rolls.
  7. Cut the avocados half way through. Remove the kernel and scoop out the flesh with a spoon from the peel.
  8. Spoon into a tall beaker with the inlaid ginger and mash with the hand blender.
  9. Season with salt and scoop in a piping bag.
  10. Divide the rice over the bowls. Spray a tuft of avocado cream in the middle of the bowl. Sprinkle with the wax belly.
  11. Spoon the watermelon (keep the moisture), cucumber and soy beans around the avocado cream in parts over the rice.
  12. Serve the moisture of the watermelon to flavor the rice.
