Ingredients
- 2 Red pepper
- 1 green pepper
- 1 yellow bell pepper
- 1 eggplant in pieces
- 2 zucchini in pieces
- 2 Red onion peeled, in four
- 16 cherry / Christmas
- 8 tablespoon olive oil
- 6 tablespoon lemon juice
- 2 clove garlic pressed
- 1 teaspoon coriander powder (ketoembar)
- 1 teaspoon ginger powder (djahé)
- 2 tablespoon honey
- 250 gram couscous
- 1 hand fresh mint minced meat
- 1 hand coriander minced meat
- 1 hand leaf parsley minced meat
- 2 lemon in parts

Directions

Preheat the oven grill. Roast the red peppers until they show dark spots.

Pack them in a plastic bag or foil or put them in a covered bowl to cool. Remove the skin and seeds and cut into strips.

Divide the green and yellow peppers, without seeds, into pieces.

Mix it with the eggplant and zucchini pieces, the onions, the tomatoes, 4 tablespoons of olive oil, 3 tablespoons of lemon juice, the garlic, the coriander, the ginger powder, the honey and salt to taste.

Well the couscous according to the instructions on the package.

Thread the vegetable pieces (except the red pepper) on the skewers and roast them under the hot oven grill. Turn them occasionally.

Scoop the roasted peppers and green herbs through the couscous. Mix the rest of the olive oil with the rest of the lemon juice and scoop it through the couscous. Serve with the lemon slices and the skewers.
