Vegetable-rich pea soup
Pea soup with lots of vegetables with mint and Veluwe fine smoked sausage.

Directions

Bring the split peas, the bay leaf, the bouillon tablet and the water to a boil in a soup pot. Cook for 30 minutes on low heat. Stir occasionally.

Cut the leaves from the carrots, remove the roots and cut into slices.

Wash the leeks and cut into half rings. Cut the smoked sausage into slices.

Add the carrot, leek and sausage to the soup. Stir through and cook gently on low heat for 45 minutes. Stir occasionally.

Add the frozen garden peas and heat for another 10 minutes.

In the meantime cut the mint leaves into strips.

Serve the soup in bowls and garnish with some mint.
