Preheat the oven to 180ºC.

Cut all vegetables and potatoes into slices of about 1/2 cm thick.

Put the onion and garlic in the baking dish and place the vegetable and potato slices and neatly upright against each other in the dish. Drizzle with olive oil and thyme and season with salt and pepper.

Cover the dish with aluminum foil and bake for about 40 minutes in the oven.

Remove the foil, sprinkle with the Parmesan cheese and cook for another 20 minutes.
