Veggie skewers with herb salsa

Ingredients
- 1 bunch fresh fresh mint for the herbal salsa
- 1 bunch fresh parsley for the herbal salsa
- 1 tablespoon capers for the herbal salsa
- 2 spring / forest onion for the herbal salsa
- 1 clove garlic for the herbal salsa
- 5 tablespoon olive oil for the herbal salsa
- 2 tablespoon White wine vinegar for the herbal salsa
Directions

Wash all vegetables and cut into equal pieces. Keep the aubergine pieces separate and sprinkle with salt. Let them pull for about 30 minutes in a colander.

In the meantime, mix all the ingredients for the herb salsa and season with salt and pepper.

Rinse the aubergine under cold water and dry in a clean cloth. Mix the eggplant with the other vegetables and pour the oil through.

Sprinkle with salt and pepper and baste the vegetables over and over on the skewers.

Roast for about 8 minutes on the barbecue and serve the vegetable skewers with the salsa.
