Cut the beef ribs into cubes, bake them over and over in a knob of butter.

Remove the meat from the pan.

Fry the onion, celery and winter carrots briefly over medium heat in a knob of butter.

Add the meat, garlic cloves, rosemary, red wine and tomato.

Fill this with lukewarm water so that everything is underneath.

Let it simmer for about three hours on a very low heat.

Blanch the green beans by boiling them in boiling water for a few minutes.

Rinse under cold water.

After two and a half hours you add the beans, chorizo and mushrooms.

Check if there is enough moisture in the pan (the meat should be underneath), add a little lukewarm water if necessary.

Let it simmer for half an hour.

Serve the dish with mashed potatoes.
