Vietnamese vegetable omelettes
A tasty recipe. The snack contains the following ingredients: fish, eggs, fish sauce (bottle of a 250 ml), lime (pressed), browned sugar, oil, spring onion (bag of 3 pieces), cucumber (in thin strips) and freshly cut (a 15 g).

Beat the eggs with the fish sauce, the juice of the lime and the caster sugar and season with salt and (freshly ground) pepper.

Brush a frying pan with oil.

Make a small omelette by putting 1 small soup spoon of the egg mixture in the frying pan.

Let the egg solidify, turn it over and bake the other side as well.

Bake three more omelettes of the remaining egg mixture.

Cut the spring onion in half and into thin strips.

Cover the omelettes with some spring onion, cucumber and 2-3 sprigs of coriander.

Roll them up and cut them in half.

Delicious with sweet chili sauce..
