Waterzooi of fish with snow peas
A tasty recipe. The main course contains the following ingredients: fish, spring onions (in pieces of 1 cm), celery (in strips), flat parsley (finely chopped), fresh thyme leaves, catfish fillet (in coarse pieces), salmon fillet (in coarse pieces), tilapia fillet (in coarse pieces), snow peas, butter (diced), dry white wine and fish stock (380 ml) or 400 ml fish broth (from 1 tablet).

Divide the spring onion, celery, parsley and thyme into a skillet. Place the pieces of fish and the snow peas in between and spread the pieces of butter over them. Sprinkle salt to taste and grind pepper over it.

Pour the wine and so much fish stock that the fish is just covered with moisture. Bring to a full boil over medium heat. Put the fire in such a way that the moisture just stays on the boil and let the fish and vegetables be cooked in about 10 minutes.

Divide the waterzooi over 4 warm deep plates. Delicious with (ready-to-eat) crostini or slices of baguette.
