White asparagus with green basil sauce and ham

Directions

  1. Additional: blender and flat bowl, preheated.
  2. Grate and press the orange.
  3. Put the asparagus one by one on a shelf.
  4. Peel them down with a peeler from just below the cup, turning the asparagus into a whip every time.
  5. Peel the bottom slightly thicker.
  6. Cut the woody undersides of the asparagus.
  7. Put the asparagus in a frying pan with plenty of boiling water with some salt.
  8. Cook the asparagus covered for 5 minutes.
  9. Then turn off the heat and leave the asparagus covered for 10-15 minutes in the warm moisture.
  10. Meanwhile, halve the slices of ham in the length and roll them up.
  11. Put the basil (leaves with stalks) in the blender.
  12. Add orange zest and juice with the mustard, crème fraîche and some salt and pepper.
  13. Mix everything while turning on the highest setting to a light green sauce.
  14. Pour the sauce in a saucepan and heat with moderate heat.
  15. Do not let it boil.
  16. Take the asparagus with a slotted spoon from the moisture.
  17. Drain well and place on the warm flat dish.
  18. Pour the basil sauce over it and place the rolls of ham around it.
  19. Garnish with basil tarts.
  20. Tasty with cooked potatoes.
