Summer main course of white beans with goat's cheese and paprika, served with arugula.

Peel the garlic and cut finely. Clean the peppers and cut into large pieces. Clean the zucchini and cut into half slices. Heat the olive oil in a frying pan. Stir fry the pepper and garlic approx. 3 min.

Add the balsamic vinegar, smother the vegetables with lid on the pan over low heat for about 5 min. Add the zucchini and reduce for the last 3 min. Add the white beans in tomato sauce and heat well.

In the meantime, crush the goat's cheese. Put a hefty serving spoon of white beans on each plate. Divide the arugula and the goat cheese over it.
