                                Break the chocolate in a refractory bowl. Put the bowl in a pan with a layer of boiling water (the bowl should not touch the water) and let the chocolate melt with stirring (au bain-marie).

                                Beat the whipped cream (not stiff). Scoop the chocolate, the whipped cream and the nougat pieces together and scoop the mass into bowls.

                                Cover with cling film and leave to freeze in the freezer in 3 hours.

                                Let the mango slices drain in a sieve.
 - 
                                Take the trays with parfait from the freezer. Immerse the bottom and side of the containers in hot water, cut off any ice at the edges with a knife.

                                Place plates on the trays, turn them over and let the parfait slide out of the trays. Sprinkle generously with icing sugar and garnish with the mango slices.
