Wholemeal club sandwich with egg, salmon and cucumber


Sandwich of wholemeal bread, boiled egg, avocado, candy cucumber, tarragon, leaf lettuce, baby spinach and smoked salmon.

Directions

  1. Boil the eggs hard in 8 minutes. Scare under cold running water, peel and cut into slices.
  2. Meanwhile cut the cucumbers in slices lengthwise. Mix the mustard with the tarragon and guacamole. Season with pepper and salt.
  3. Spread per person 1 slice of bread on one side with the guacamole. Divide the lettuce over the rest of the slices and also half of this with the cucumber and salmon.
  4. Stack one slice with lettuce on each slice of salmon. Cover this with slices of egg and season with pepper.
  5. Place the slices with the guacamole down on them. Insert 2 skewers in each sandwich and cut the bread diagonally. Serve immediately.
