Wild west rice


Vegetarian American dish with red onion, multigrain rice, chili beans, cranberries, pumpkin and chives.

Directions

  1. Preheat the oven to 180 ºC.
  2. Chop the onions and finely chop the chives.
  3. Cut the pumpkin into pieces. Remove the seeds and the stringy inside and cut off the skin with a sharp knife. Cut into pieces of 1 cm.
  4. Heat the oil in a frying pan. Fry the onion 1 min. Scoop the rice through and cook for 1 min.
  5. Add the beans, cranberries, crumbled bouillon tablets and the hot water. Bring to a boil and simmer for 5 minutes.
  6. Grease the oven dish. Scoop the rice, beans and pumpkin into the dish. Cover with aluminum foil and simmer for approx. 45 minutes in the middle of the oven.
  7. Take the dish out of the oven, scoop the chives through it and sprinkle some over it. Bon appétit! .
