Winter salad with quinoa, orange and pistachio


Salad of three-color quinoa, string beans, orange, grilled artichoke, pistachios, white cheese, mint and chives.

Directions

  1. Prepare the quinoa according to the instructions on the packaging.
  2. In the meantime, remove the stem placement of the string beans. Halve the beans in width and cut the halves lengthwise in strips of ½ cm thick.
  3. Bring a pan with water and possibly salt to the boil and cook the beans for 4 minutes.
  4. Put in a colander and rinse under cold running water. Let it drain well.
  5. Clean the oranges, grate the orange skin and press the fruit.
  6. Use a sharp knife to cut the skin and the white skin of the other oranges. Cut the flesh into slices of 1 cm and the slices into 4 pieces.
  7. Let the artichokes drain and collect 3 tbsp of the oil (per 4 persons). Mix with the orange zest and juice to a dressing.
  8. Cut the artichokes into pieces.
  9. Heat a frying pan without oil or butter and toast the pistachios for 4 minutes on low heat.
  10. Meanwhile cut the cheese into cubes of 1 cm. Slice the leaves of the fresh mint and the chives. Chop the nuts coarsely.
  11. Mix the quinoa, string beans, orange pieces, artichokes, cheese, ⅔ of the herbs and the dressing. Season with pepper and salt.
  12. Divide over a flat dish. Sprinkle with the rest of the herbs and the pistachios.
