Wintry Italian minestrone soup with lean bacon strips, vegetables and white beans.

Directions

  1. Peel the winter carrot and cut into cubes of ½ cm. Chop the onion and finely chop the garlic.
  2. Heat the oil in a soup pan and fry the onion for 2 minutes. Add the garlic and fruit for another 1 min.
  3. Add the carrot and Italian herbs and cook for 3 minutes.
  4. Pour in the water and add the bouillon tablets and tomato cubes. Bring to a boil and cook over medium heat for 10 minutes.
  5. Add the white beans in tomato sauce and break the spaghetti into pieces above the soup. Let it simmer for another 8 minutes.
  6. Add the spinach in the last 2 minutes. Season with pepper and salt.
