A tasty Italian recipe. The main course contains the following ingredients: fish, olive oil, courgettes, garlic, whipped cream (125 ml), flat parsley ((20 g), only the leaves), walnuts ((60 g bowl), coarsely chopped), yellow fin sole fish fillets ((bag of 750 g, frozen) and thawed).

Directions

  1. Preheat the oven to 200 ° C. Grease the roasting pan with 1 tbsp oil. Cut the courgettes into slices. Finely chop 1 clove of garlic and mix with the zucchini. Put the mixture in the roasting pan. Pour the cream and pepper and salt to taste. Put the roasting pan in the oven for 20 minutes.
  2. Meanwhile, chop the parsley roughly. Put 1 clove of garlic with the walnuts and parsley in the mortar. Rub to a smooth mass. Add the rest of the oil and pepper and salt to taste. You can also make the pesto with the hand blender. Brush the fish fillets with the pesto and keep separate.
  3. Remove the roasting pan from the oven, spread the fish over it and put in the oven for another 7 to 10 minutes. Tasty with rice.
