Zucchini, beet and spinach


A tasty recipe. The vegetarian side dish contains the following ingredients: courgettes, olive oil, boiled beet ((500 g), peeled), white wine vinegar, shallot (chopped), spinach (a 300 g) and raisins.

Directions

  1. Preheat the oven to 190 ° C. Cut the courgettes at an angle of 1 cm. Spread over a baking sheet covered with parchment paper. Sprinkle with 2 tbsp oil and sprinkle with salt and pepper to taste. Bake in the middle of the oven for about 20 minutes. Cut the beetroot into pieces. Place them between the zucchini after 10 minutes.
  2. Beat a dressing of the rest of the oil and vinegar. Add the shallot and pepper and salt to taste. Remove the vegetables from the oven and scoop with the dressing, spinach and raisins.
