Zucchini rolls
Grilled Italian courgette rolls with goat's cheese and mozzarella

Scrape long ribbons of the courgettes with a cheese slicer.

Grate the yellow skin of the lemon and squeeze out the fruit.

Put 2/3 of the basil leaves with 3 tbsp lemon juice and the oil in a high cup and puree with the hand blender. Season with pepper.

Heat the grill pan. Brush the zucchini with some basil oil and grill in portions 3 minutes. Turn halfway.

Tear the mozzarella into 10 pieces and the rest of the basil into 20 pieces. Cut the goat's cheese into 10 pieces.

Place one piece of mozzarella on the half of the zucchini with a leaf of basil, roll up and secure with a cocktail stick.

Place a piece of goat's cheese and basil on the other half of the zucchini, roll up and secure with a cocktail stick.

Place all the rolls on a dish, drizzle with the rest of the basil oil, sprinkle with the lemon zest and pepper. Serve immediately. Bon appétit! .
