Directions

  1. Cut the courgettes in quarters lengthwise. Remove the seeds with a sharp knife and cut the flesh into 1 cm thick slants.
  2. Heat the oil in a stirring stir-fry the zucchini 3 minutes. Season with salt and pepper. Put in a bowl.
  3. Rinse the lentils in a colander under cold running water. Drain and add to the zucchini.
  4. Cut the apples into quarters, remove the core and cut the flesh into thin parts. Cut the goat's cheese into cubes.
  5. Mix the apple and cheese with the salad and drizzle with the dressing.
