Book review: Meal prepping vegetarian

Meal prep means that you cook for a whole week at a time. You do your shopping once and then you spend two hours in the kitchen to prepare a meal within 10 minutes every evening for the rest of the week. There are a number of advantages: more rest, less food waste and you eat healthier. Nothing new and maybe you are one of those people who works with a weekly menu and only goes shopping once a week. But unfortunately I don't fall into that category. I cycle past the supermarket every day and often I have to think about what to eat in the supermarket. This takes a lot of time and because of this I regularly choose something easy and often unhealthier. When we received this book at the editorial office, I immediately thought: that's something for me. I already eat less meat anyway, so this is a good reason to try vegetarian for a whole week.
Weekly menus

In the book you will find 13 different weekly menus. I don't like everything from week 1, so I choose seven recipes and put together my own weekly menu. It is useful that the recipes at the back of the book are also separate and all ingredients in a row, so that the shopping list is made in no time. After taking everything I will get to work on Sunday afternoon. I'll make soup, bread, spaghetti sauce, and a pie crust for an onion pie later that week. Some things go in the fridge, some in the freezer. It takes some getting used to and quite a lot to do all at once, but what a wonderful feeling to start the week prepared. The rest of the week is also going well. Because all the preliminary work has been done and I no longer have to go to the supermarket after work, it is quieter and we sit at the table earlier. There are many tasty dishes, such as a curry of vegetables and rice, green omelette with winter salad (see image above), carrot cake, Italian soup with cereals and potato salad. Favorite in our home so far was the zucchini tomato pie. Delicious! I will definitely 'meal prep' more often and get started with this cookbook.
