Cream or another milk product is added to the quark in order to obtain the fat content determined in accordance with the Commodities Act. This means that full-fat quark is a lot richer in kilocalories, but does not necessarily contain more proteins. Semi-skimmed quark even consists of more protein than full-fat quark. However, the less fat the quark is, the less vitamin A it contains. This is the case with all dairy products. Vitamin A is in the fat that is lost when whole milk is processed into skimmed milk. For the other vitamins and minerals, it makes little difference whether you eat full or low-fat dairy.
