Research Principal researcher Thomas Meinart Larsen of the University of Copenhagen stated in September 2014 that you may lose five kilograms in six months with the New Nordic diet. To this end, he conducted a study in two phases. During the first phase, a team of scientists reviewed the New Nordic diet recipes from Noma, a Danish star restaurant. Voted the best in the world in 2010, this restaurant mainly works with fresh, healthy and seasonal dishes using local products. The menu includes salmon, reindeer and cabbage. 181 overweight people were tested during the second research phase. Of these, 58 people were allowed to follow a traditional Danish diet. This consists partly of imported foods such as extra salt, fats and sugars. The other 113 individuals were put on the New Nordic diet. Dishes full of local foods are on the menu. To cook, both groups were given a variety of recipes through a specific diet book. The participants did not have to count calories and were allowed to eat until they were full. After six months, it turned out that people who followed a traditional diet had lost an average of 1.5 kilograms. The group following the New Nordic Diet, on the other hand, lost an average of 4.7 kilograms, which is entirely due to the fat mass. Finally, the test subjects suffered less from inflammation associated with prediabetes (not quite yet diabetes mellitus)
