Cut the courgette into cubes and finely chop the coriander.

Boil the rice with the bouillon tablet according to the instructions on the package.

Immerse the seafood in hot water for a few minutes to defrost. Drain in a colander and pat dry.

Heat the oil in a stir-frying pan the stir-fry mix with the zucchini 5 minutes. Mix in the rice and seafood and warm for a few minutes.

Divide the paella over 4 plates and sprinkle with the coriander.
