Peel the apple and cut into quarters, remove the core and cut the quarters into pieces.

Halve the lemon and degrease the bowl with the lemon. Split the eggs. Put the proteins in the degreased bowl and the egg yolks in a different bowl.

Sift the flour over the egg yolks and whisk the milk through a whisk until you have a smooth batter. Beat the cinnamon and sugar through.

Degrease the whisks of a mixer with the rest of the lemon. Beat the egg whites stiffly with the mixer. Spatefully spread the protein in parts through the batter.

Melt some butter in a pan and scoop 2 heaps of 8 cm diameter into the pan. Put some pieces of apple and a few raisins on the still liquid batter.

Bake the pancakes in 5 minutes brown and done. Turn halfway. Bake 2 pancakes until the batter is finished.

Drizzle 4 pancakes each with 1 tbsp honey and serve immediately. Bon appétit! .
