Clean the pineapple and cut it into thin slices lengthwise. Roast the slices in a hot grill pan to create golden brown stripes on both sides. Beat the lemon juice and the honey through the mascarpone.

Pile some slices of warm pineapple on the plates and pour the mascarpone dressing over them. Cut the basil into fine strips and mix with the vanilla sugar. Sprinkle this mixture over the pineapple salad.
