Directions

  1. Preheat the oven to 190 ºC. Spread the slices of bacon over a baking sheet covered with parchment paper and sprinkle with the caster sugar. Fry the bacon in approx. 15 min. Brown and crunchy. Remove from the oven and leave on the baking sheet until use.
  2. Split the eggs. Put the egg whites in a bowl with a 1/2 lemon degreased bowl and the egg yolks in a mixing bowl.
  3. Sift the flour over the batter bowl and whisk the milk through it until you have a smooth batter. Beat the cinnamon and sugar through.
  4. Degrease the whisks of a mixer with the rest of the lemon. Beat the egg whites in 5 minutes with the mixer. Spatefully spread the protein through the batter. This makes the batter extra airy.
  5. Melt a knob of butter in a pan and scoop 4 heaps of 8 cm diameter into the pan. Bake the pancakes in 5 minutes brown and done. Turn halfway. Bake 3 portions. Serve with the slices of sweetened bacon. Delicious with pouring syrup.
