Put the yeast and sugar in a bowl. Pour 125 ml of lukewarm water and let it stand until it begins to fizzle. Mix the flour with 2 tsp salt and make a mountain with a well in the middle. Pour the yeast mixture and oil into the well and knead for 10 minutes to a smooth dough. Add some lukewarm water if the dough is too dry and some extra flour if it is too humid. Leave to rise in a warm place covered with a clean, damp tea towel for 11/2 hours.

Preheat the oven to 250 ° C. Knead the dough thoroughly on a floured work surface. Divide the dough into 8 equal balls. Press them down a little. Take a flat ball in your hand and put an anchovy fillet on it. Fold the dough around and roll a ball. Place the balls on a baking sheet covered with parchment paper. Brush them thinly with the milk and fry in the oven for about 15 minutes until golden brown and done.
