Antipasti marinated courgette
A tasty Italian recipe. The vegetarian starter contains the following ingredients: courgettes, olive oil (plus 2 tablespoons), fresh mint (15 g), garlic (pressed), balsamic vinegar and salt and pepper.

Cut the courgettes at an angle of 1/2 cm thick.

Mix them in a bowl with 2 tablespoons of olive oil.

Heat a grill pan or frying pan with non-stick coating and bake the slices in portions.

Puree in a food processor the leaves of fresh mint with garlic, balsamic vinegar and 150 ml of olive oil.

Mix the zucchini with mint dressing and leave to marinate for at least 30 minutes.

Season with salt and pepper..
