Antipasti vegetable rolls
A tasty Italian recipe. The vegetarian snack contains the following ingredients: roasted peppers (465 g), marinated artichokes (100 g), grilled eggplant (100 g), sundried tomatoes in oil, mozzarella (cheese, a 125 g), zucchini, olive oil, fresh walnut pesto ( a 100 g) and fresh mint (a 15 g).
Let the peppers, artichokes, eggplant and sun dried to drain in a sieve well.
Cut the peppers and aubergines into broad strips and wrap them in strips of mozzarella.
Stick the rolls with an artichoke or tomato to a cocktail stick.
Fry thin, long slices of courgette in olive oil, cover with walnut pesto and sprinkle with fresh fresh mint.
Roll up and fix..
