Split egg. Put the flour, egg whites, sugar and a pinch of salt in a bowl.

Clean lemon and grate the yellow skin above the bowl.

Cut the butter through 2 knives until a crumbly dough is created.

Knead the crumbly dough into a cohesive dough ball by hand.

Press the ball flat, pack in cling film and place in the refrigerator for 1 hour. The dough must rest so that it becomes firm.

Spread the work surface, rolling pin and the dough with flour and roll 2/3 of the dough with the rolling pin to a 1 cm thick slice. Fat spring form.

With the spring form, place a circle and place it on the bottom of the form. Line the edges with the rest of the rolled out dough.
