Vegetarian Italian salad with marinated artichoke hearts, arugula, honey and Grana Padano cheese.

Directions

  1. Let the artichoke hearts drain and store the oil.
  2. In a bowl, mix 2 tbsp of the collected oil with the lemon juice and honey.
  3. Cut the artichoke hearts into quarters, grate the cheese. Mix the artichokes, arugula and cheese through the dressing.
