Heat the oil in a frying pan and fry the croquettes in about 18 minutes until golden brown and done.

In the meantime, heat the remaining oil in a frying pan and fry the onion and red cabbage for 5-6 minutes.

Prepare the mashed potatoes according to the instructions on the packaging. Spoon through the red cabbage and season with the Provençal herbs, pepper and salt.

Divide the stew over 4 plates, each with a sausage. Serve the pickles separately.
