Slice the garlic. Heat the butter in a frying pan and fry the garlic for 1 min. Add the leek and cook over a high heat for 3 minutes. Change regularly.

Add the cream, ham and mustard and heat for another 2 minutes. Season to taste with salt and pepper.

Meanwhile, cut the apple into pieces and remove the core. Cut the slices into thin strips (julienne). Spoon the apple through the leek.
