Beetroot with vegetable crisps
A tasty recipe. The vegetarian starter contains the following ingredients: boiled beet (500 g), lemon (scrubbed), extra virgin olive oil, fresh thyme leaves (15g container) and vegetable crisps (a 100g).

Peel the beet and cut into very thin slices.

Halve the lemon.

Grate the yellow skin of 1 lemon half and press this half out.

Make a marinade of the lemon juice, grater, oil, thyme and pepper and salt to taste.

Divide the beet over 4 plates and drizzle with the marinade.

Divide the vegetable crisps over the beet just before serving.

Sprinkle with pepper to taste if necessary.

Tasty with parisiennes (afbakbroodjes) and a wedge of lemon..
