Goat cheese souffle with red onion
A tasty French recipe. The vegetarian starter contains the following ingredients: whole milk, butter, red onion (chopped), flour, eggs (split), goat cheese ((Bettine Blanc 55) and crumbled).

Preheat the oven to 175 ° C. Heat the milk in a pan until lukewarm. Heat the butter in a saucepan and add the onion. Let it simmer for 5 minutes until the onion is done. Add the flour and stir for 2 minutes until the whole is light brown. Add the milk gradually while stirring and cook until the sauce is bound. Allow to cool.

Stir in the egg yolks, cheese and pepper and salt. Beat the egg white until it shines and forms firm peaks. Spatula lightly through the sauce. Divide over the ramequins and place them in the roasting pan. Pour boiling water into the roasting pan until the molds for 3/4 are in the water. Bake golden brown in 15-20 min. Serve immediately.
