Heat the pear juice with the sugar and 1 sprig of rosemary and simmer for about 10 minutes on a low setting. Cool this juice in the refrigerator for 2 hours.

Pour a layer of the pear juice into 4-6 champagne glasses and fill with the prosecco or for an alcohol-free version of carbonated mineral water. Garnish with a sprig of rosemary.
