Heat a frying pan without oil or butter and toast the pistachios over medium heat in 3 min. Golden brown.

Pour the honey with the nuts and bake for another 2 minutes.

Cut the fresh mint into thin strips. Divide the curd over the bowls and stir in the fresh mint. Pour the honey over it.

Divide the pistachio nuts and blueberries over the curd cheese. Garnish with the mint leaves.
