Clean the lemons, cut into quarters and cut out the flesh.

Cut the quarters peel into strips and bring them to a boil in a pan of water.

Drain, bring the peels back to the boil with clean water and cook for about 30 minutes.

Strain and store 100 ml of the cooking water.

Heat this cooking water with 100 grams of sugar until the sugar is dissolved.

Add the strips of lemon zest and cook gently for about 30 minutes, until the strips are soft.

Allow to cool completely.

Remove the strips from the syrup, drain and let dry for about 1 hour.

Roll the strips through 100 grams of sugar and allow to dry again.

Meanwhile, melt 100 grams of dark chocolate.

Dip the candied lemon half in the chocolate and let it solidify.
